Colorado has some excellent food, but there are no staples that have originated from CO afaik. All of the culinary excellence, which is present here, is imported culture. Mostly present in Mexican restaurants and Asian fusion Michelin type operations.
Hatch Green Chiles [pork green chili] is the closest thing to proprietary cuisine imo, native to the desert west, but it’s not CO specific — see New Mexico
Ofc much of American culture is imported, but CO has even started importing in-n-out franchises in the last few years. Wack. Denver is the high desert without notable uniquity. The Rocky mountains are truly the only identity here, with most locals being priced/vibed out [myself included] by the influx of Texans, Californians etc. in the great migration that started circa 2010
